Abstract

Sejaktahun 2020, dunia telahdilanda oleh pandemi COVID-19 (Corona Virus Disease),berbagaiupayaterusdilakukan para ahli dan penduduk global demi mengakhiriancaman virus yang terusmenyerang. Kebiasaanmembersihkandiriterutamamencucitanganmerupakan salah satucara yang cukupefektifuntukmencegahpenyebaran virus corona.Pisang merupakanbuah yang paling banyakdiproduksi di Indonesia. Berdasarkan data dari Badan Pusat Statistik (BPS) dan DirektoratJenderalHortikultura, pada tahun 2018, Indonesia memproduksi pisang sebanyak 7,26 juta ton dan setiaptahunnyaakanterusmeningkat, dikarenakanbuah pisang yang banyakdiproduksi, menyebabkanmeningkatnyalimbahkulit pada buah pisang. Kulit pisang mengandung flavonoid, saponin, dan tanin yang mampumenghambatpertumbuhanbakteri. Pada penelitianini, limbah pisang yang digunakanyaitu pisang kepok, yang mana pisang kepokbanyakdijumpaiterutama di daerahKalidoni, Palembang. Selainkulit pisang, ampas kopi juga menjadi salah satulimbah yang cukupbanyakdiproduksi. Pada tahun 2021, pasokan kopi diprediksimencapai 795 ribu ton dengankonsumsi 370 ribu ton, sehinggaterjadi surplus 425 ribu ton. Namun, ampas kopisebenarnyamemilikikandungan yang baikuntukkulitsepertizatantioksidan yang cukuptinggidiantaranya flavonoid dan polifenol dan biasadimanfaatkansebagaiscrub yang bagusuntukkulit. Oleh karenaitu, tujuanpenelitianiniuntukmengetahuicaramemanfaatkanlimbahkulit pisang kepokmenjadiprodukekonomiyaitusabunsanitizerdenganpenambahanampas kopi sebagaiscrubbing agent yang sesuaidengankualitas SNI 2588:2017, sekaligusdapatmendukungprotokolkesehatan yang telahdibuatuntukmembiasakandirimencucitanganmenggunakansabunsanitizer.Penelitianini juga bertujuanuntukmendapatkanformulasiterbaikdarivariasikomposisiekstrakkulit pisang kepokdenganatautanpapenambahanampas kopisebagaiscrubbing agent dalampembuatansabun sanitizer. Variasiekstrakkulit pisang kepokyaitu 1%, 2%, 3%, 4% dan 5% dalam 150 ml volume sabun. Analisisproduksabunsanitizer meliputianalisisderajatkeasaman (pH), bahantidaklarutdalametanol, kadarasam lemak bebas, densitas dan teganganpermukaansabun, organoleptik, sertapengujianbakteri. Berdasarkanhasilanalisis yang dihasilkansemuasampelmemenuhikualitas SNI, namunsampeldenganformulasiterbaikdiperoleh padasabundengankomposisiekstrak 5% tanpapenambahanampas kopi yaituditunjukkandengannilai pH 8, bahantidaklarutetanol 0,396%, kadarasam lemak bebas 0,4836%, densitas 1,0204 gr/ml, dan teganganpermukaan 3,6667 dyne/cm, sehinggadapatmenghasilkansabunsanitizerantibakteridenganformulasiterbaik. Kata kunci:LimbahKulit Pisang, Ampas Kopi, SabunSanitizer, Scrubbing Agent ABSTRACT UTILIZATION OF KEPOK BANANA (Musa paradisiaca) PEEL WASTE INTO SOAP SANITIZER WITH THE ADDITION OF COFFEE GROUNDS AS A SCRUBBING AGENT (Abiyyi Sufyan, 2021, 60pages, 10tables, 18 pictures, 4appendices) Since 2020, the world has been hit by the COVID-19 (Corona Virus Disease) pandemic, various efforts have been continuously made by experts and the global population to end the threat of the virus that continues to attack. The habit of cleaning yourself, especially washing your hands, is one of the most effective ways to prevent the spread of the coronavirus. Bananas are the most widely produced fruit in Indonesia. Based on data from the Central Statistics Agency and the Directorate General of Horticulture, in 2018, Indonesia produced 7.26 million tons of bananas, and every year it will continue to increase, because bananas are produced a lot, causing an increase in skin waste on bananas. Banana peel contains flavonoids, saponins, and tannins that can inhibit the growth of bacteria. In this study, the banana waste used was kepok bananas, where kepok bananas were often found, especially in the Kalidoni area, Palembang. In addition to banana peels, coffee grounds are also one of the wastes that are quite a lot produced. In 2021, the coffee supply is predicted to reach 795 thousand tons with a consumption of 370 thousand tons, resulting in a surplus of 425 thousand tons. However, coffee grounds contain good ingredients for the skin, such as high levels of antioxidants, including flavonoids and polyphenols, and are commonly used as a good scrub for the skin. Therefore, the purpose of this study was to find out how to utilize kepok banana peel waste into an economic product, namely sanitizer soap with the addition of coffee grounds as a scrubbing agent by the quality of SNI 2588:2017, as well as to support health protocols that have been made to get used to washing hands, use soap sanitizer. This study also aims to obtain the best formulation of variations in the composition of the kepok banana peel extract with or without the addition of coffee grounds as a scrubbing agent in the manufacture of sanitizer soap. Variations of kepok banana peel extract are 1%, 2%, 3%, 4% and 5% in 150 ml of soap volume. The analysis of sanitizer soap products includes analysis of the degree of acidity (pH), insoluble ingredients in ethanol, free fatty acid levels, density and surface tension of soap, organoleptic, and bacterial testing. Based on the results of the analysis, all samples met the quality of SNI, but the sample with the best formulation was obtained in soap with an extract composition of 5% without the addition of coffee grounds, which was indicated by a pH value of 8, ethanol insoluble material 0.396%, free fatty acid content 0.4836%, density 1.0204 g/ml, and surface tension 3.6667 dyne/cm, to produce antibacterial soap with the best formulation.
