Drying is one way to remove or eliminate a lot of water of a substance by evaporating most of the water contained by evaporation heat energy. In the process of making crackers, frying is the stage before entering the drying process crackers. The quality depends on water content crackers contained within crackers. Therefore do Design and build a dryer-type crackers tray dryer. Variation 6 hours, 6.5 hours and 7 hours is not fixed variable to calculate Specific Energy Consume in crackers and to determine the optimum time drying process crackers. From the results of account, the longer the greater of drying time on the Specific Energy Consume smaller crackers and water content on crackers. At 6 hours the SEC at 1133.59 KJ / Kg with a water content of 12.19%, at a time of 6.5 hours the SEC at 1228.06 KJ / Kg with a water content of 11.73% and at a time of 7 hours SEC for 1322, 52 KJ / Kg with a water content of 11.3%.
