Abstract
Ethyl acetate is a clear liquid, colorless, and has distinctive smell that is commonly used as a flavor enhancer, solvent in gasoline, enhancing the octane number in gasoline. Ethyl acetate can be synthesized with ethanol and acetic acid through esterification reaction. The banana peel contains valuable components, such as carbohydrates, vitamin C, calcium and other nutrients that can be utilized in the synthesis of ethyl acetate thus increasing its economic value. The purpose of this study was to utilize waste banana peel (Musa paradisiaca L.) in the making of ethyl acetate. The inside of a banana skin has scraped then dried and ground up into poridge banana peel. 50 grams of porridge banana peel was subsequently hydrolyzed using acid catalyst (HCl) at pH1 for 180 minutes with a magnetic stirrer, then filtered and obtained hydrolyzate, the hydrolyzate was added 0.1 M NaOH until pH 4.5. The hydrolyzate was then fermented by adding yeast 'Fermipan' 14.29% of the weight of raw materials and homogenized with a shaker for 15 minutes at 150 rpm, the mixture is fermented for 24 hours later. Ethanol fermentation results further esterified with acetic acid in the presence of hydrochloric acid in the mol ratio of ethanol and acetic acid is 1 : 3 and sulfuric acid 96%. The effect of various process variables such as the ratio of the amount of acetic acid and ethanol observed in this experiment. Specifications ethyl acetate observed was optimum volume of ethyl acetate, %yield, and refractive index of ethyl acetate. The maximum yield obtained in this study was 29.88 % with the condition of acetid acid and ethanol of 1: 3 and a temperature of 50°C. The levels of glucose and refractive index of ethyl acetate sequentially best is 29.37% and 1.360. The results obtained in the study showed that the skin of waste banana peel can be used as alternative are cheap and easily in the manufacture of ethyl acetat.
