Abstract

Raja banana peel is one of the wastes that can be economically valuable if used properly. Since raja banana peel has a relatively high amylose content about 59%, it is highly potential to be a raw material of an edible film. The addition of garlic extract as antimicrobial should improve the quality of edible film to prevent the damage to edible film and food materials. The purpose of this research is to study the effect of garlic extract addition to the mechanical characteristic of edible film such as tensile strength, elongation, thickness, biodegradable and storability. The edible film on this research was made of 3% w/v raja banana peel starch, 2% w/w sorbitol plasticizer and varied garlic extract concentration of 0%, 5%, 10% 15% and 20% (v/v solution). The result of this research indicate that the addition of garlic oil extract impaired the tensile strength and increased the thickness, elongation and storability. The optimum result observed at edible film with 10% concentration of garlic oil extract which has a value of 0,00701 MPa tensile strength, 17,27% of elongation, 0,044 mm thickness and more than 60 days storability.
