Abstract

Senduduk root fruit is one type of fruit that has nutrition that are good for the human body. This research was conducted in order to make senduduk root fruit can be consumed by the people easily by applying it into instant powder drink. This study was conducted to determine the concentration of tween 80 (0.25%, 0.50%, 0.75%, 1% and 1.25% v / v total) and the drying temperature of (50, 60,70C) are the best for producing instant powder drink of senduduk root fruit that standardized. The results showed that the concentration of tween 80 and the drying temperature affects the quality of instant powder drink of senduduk root fruit production. Instant powder drink of senduduk root fruit are well produced at the concentration of tween 80 0.25% v / v total and drying temperature 50 ͦC, with water content of 9.03%, 98.96% solubility, pH 3.76.
