This research is done at Restoran Sederhana Lintau 88 Palembang entitling “The Cash Optimization To Maintain Liquidity and Improve Rentability”. The target of this research is to know the cash balance of Restoran Sederhana Lintau 88 Palembang whether at optimal storey level or not yet. And to know optimal cash relation with rentability and likuidity. The method used to determine optimal cash was method of H.G. Guthmann. While to asses storey level of likuidity were Current Ratio, Quick Ratio, and Cash Ratio. And to asses rentability used Return On Invesment and Return On Equity. Result of calculation of current ratio and Quick Ratio shown storey of likuiditas relative go up and down of year 2013 -2015. The valuable of Cash Ratio in the year 2013 –2015 conceited that is between 60% - 80%, despite the conition of cash ratio relative go up and down. For ROI (return on investment) and ROE (Return on equity) in the year 2013 – 2015 also experiencing of improvement. So Pursuant to result of analysis above, can be taken by conclusion that company not yet determined the amount of optimal cash which must be defended by company. Therefore company should not budget the amount of undersize cash or too big, but maximizing exploiting of cash without disregarding cash balance. So that operational activity in company can continue running. Besides if there are excess of cash in company should be inculcated in the form of gold, investment at marketable securities or of the extension of effort which is on finally will add company profit.
