Abstract

Plastic of packaging materials is often used and the use of synthetic material has an impact on environmental pollution. Development of edible films in food can provide better product quality and extend the life, it can also be an environmentally friendly packaging materials. In this research study with the manufacture of edible film of aloe vera gel and chitosan assisted with pemlasti substances (plasticizers). Aloe vera gel has many benefits and benefits in everyday life. This experiment aims to determine the effect of plasticizer type and concentration on the quality of edible film to be formed. The plasticizer that is used is glycerin, sorbitol, and glucose syrup with a concentration v / v 3 ml, 5 ml and 7 ml. Edible films formed into gels and oven dried at a temperature of 50 oC. The study states that the addition of plasticizer volume decrease of tensile strength 111-17 kg/cm2, the thickness increased from 0.025 to 0.08 cm, the solubility decreases 15-8%, 2-13% moisture absorption increases., Increasing moisture content 11-24 %, ash content decreased from 0.5 to 1.3%, and 26-91% increased rate of biodegradability. The results showed that the concentration and type of plasticizer plasticizer affects the characteristics of edible film-chitosan gel aloe vera.
